14 Jul Artist Carves Incredible Magical Forest Creatures Out Of Avocado Pits 

Everybody knows that avocados are in vogue right now. It seems like you can’t order anything these days without someone trying to slip it surreptitiously into your meal, and every bite of every dish seems to bear with it a lingering taste of guacamole. People are having it on toast, in sandwiches and tacos, in salads and cocktails, and even for dessert! Personally, I like them fine, but maybe not enough to eat them every day.

The one thing that always gets my goat is those damn stones inside them. Gigantic seeds roughly the same size as a tennis ball, it’s a lot of effort to scrape all the green flesh off the side of them to get at all the goodness, and even then you’re left with a gigantic bit of vegetable matter left over. If only there was a way we could turn them into something useful. Luckily, one Irish artisan has come up with the answer. Jan Campbell has a very special talent; namely, carving avocado pits into incredible decorative figures based on ancient Celtic mythology.
